These quick toasted breads are the perfect accompaniment to hummus and baba ghanoush on an appetizer platter.

8 slices of crusty bread cut 1/2-inch thick, halved crosswise
2 medium of tomatoes seeded and diced
2 tablespoons of olive oil
2 cloves garlic minced
1 teaspoon of dried oregano
Salt and pepper
Shredded Parmesan or other hard cheese


  1. Preheat oven to 400°F. Place bread on a baking sheet and toast until lightly crisped. Combine tomato, olive oil, garlic and oregano; season with salt and pepper. Top toasted bread evenly with tomatoes. Sprinkle with cheese. Return to oven for a few minutes. Serve warm.
