Ingredients
1 lb potatoes, peeled and shredded
1 lb potatoes, boiled, mashed, and cooled
1 egg, lightly beaten
1¼ cup flour
½ tsp baking powder
1 cup buttermilk
7 oz extra sharp Irish cheddar
Kosher salt
Directions
After grating your raw potatoes, squeeze in a towel to get rid of excess moisture. Season with a pinch of salt and toss to coat.
To the raw potatoes add the cooled mashed potatoes, flour, baking powder, cheese, and a few large pinches of salt and stir to combine.
Add egg and buttermilk and stir to combine making sure there are no dry spots.
Heat a pan over medium heat with a few tablespoons of butter or neutral oil. Add a ladle of batter to the pan and reduce the heat to low. Cook for a few minutes until the edges start to brown and then flip. Remove from the pan when both sides are golden brown and lightly crisped.
Serve with sour cream, chives, and smoked salmon for a delicious Irish breakfast!
