Mini Meatball Pasta

Meatballs

• 1 lb ground beef
• 3/4 tbsp Italian seasoning
• 3/4 tbsp paprika
• 2 tsp garlic powder
• 1 tsp salt
• 1/2 tsp black pepper
• 1/2 cup breadcrumbs
• 1 egg
• 2 tbsp olive oil

Pasta

• 1 box pasta of choice
• 1 jar (24 oz) pasta sauce
• 2 cups chicken broth or water
• 1/2 cup heavy cream
• 1/3 cup Parmesan cheese
• 1/3 cup mozzarella cheese
• 1 tsp garlic powder
• 2 tsp Italian seasoning
• 1 tsp basil
• 1/2 tsp salt
• Fresh basil or parsley for topping

1. In a large bowl, combine ground beef, Italian seasoning, paprika, garlic powder, salt, pepper, breadcrumbs and egg. Mix until well combined and form into mini meatballs.
2. Heat olive oil in a large pan over medium heat. Add meatballs and brown on all sides.
3. Add chicken broth and pasta to the pan. Cover and boil for 2 minutes less than the package directions.
4. Remove the lid, lower heat to low and stir in pasta sauce, garlic powder, Italian seasoning, basil and salt. Simmer for 1 minute.
5. Stir in heavy cream, Parmesan and mozzarella until creamy. Simmer for 1 to 2 minutes.
6. Top with fresh basil or parsley and enjoy!
